Shepherd’s Pie

Original recipe yields 1 serving
1 lb ground beef
1 box instant mashed potatoes
3 Tbsp flour
1 Tbsp butter
1 can beef broth
1 bag frozen mixed vegetables
2 cups shredded cheddar cheese

Preheat the oven to 375 degrees F. Brown ground beef. Prepare mashed potatoes according to box instructions. Make the rue with the flour and butter, then add broth and let it simmer until it thickens.

Mix ground beef, frozen vegetables and beef gravy together in a 13 x 9 pan. Layer the mashed potatoes over the beef mixture.

Bake in the oven for 30-45 minutes or until heated through and the mashed potatoes have a nice brown crust. Sprinkle the shredded cheese on top and allow it to melt on the top.
