Olive oil
4 center cut pork chops
Flour
1 medium onion
4 large potatoes
4 large carrots
2 1/2 cups beef broth
Thyme
Fresh ground pepper & salt

Let's Make It

Heat oil in large deep skillet, dredge chops in flour and brown all sides in oil. Add chopped onion and cook till soft.

Peel and cut potatoes & carrots into 2" pieces, add to skillet. Cover all with beef broth; add seasonings to your taste.

Cover bring to a simmer, cook for about 45 min until vegetables are tender.
