Preheat oven to 375 degrees F. In medium skillet, melt butter and saute onions until soft and golden brown. Add hash browns and broccoli to onions and cook until soft. Season with salt & pepper to taste.
In medium mixing bowl, whisk eggs, almond milk, milk, cottage cheese and 1 cup of cheese until blended.
Spread 1/4 cup of Swiss cheese onto bottom of pie crust. Pour skillet mixture over cheese into pie crust, making holes throughout for the egg mixture to seep through. Sprinkle 1/4 cup Swiss cheese over skillet mixture in pie crust. Pour egg mixture over skillet mixture into pie crust.
Bake uncovered on baking sheet in prepared oven for 40 minutes, or until egg mixture has set and toothpick comes out clean. Remove quiche from oven and sprinkle remaining cheese on top of quiche and bake for an additional 5 minutes. Let stand for 10-15 min and cut and serve.
