1 Tbsp dried shallots or onions
1/2 bag frozen chopped spinach, still frozen but broken up
1 Tbsp cornstarch

Preheat oven to 400°F. Spray with cooking spray 6 1/2 cup ramekins or 8 if smaller.
Mix all ingredients together in a bowl. Divide into ramekins. Set on baking tray.
Place in preheated oven. Reduce heat to 350°F and bake 50 minutes.
