Original recipe yields 1 serving
3 cups rolled oats
1 cup whole almonds
3/4 cup shredded coconut
1/3 cup plus 2 tablespoons dark brown sugar
1/3 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon kosher or sea salt
1/3 cup pumpkin seeds (shelled and unsalted)
1 cup raisins or chopped dried cherries

Heat oven to 250°F. In a large bowl, combine all ingredients except raisins (or cherries); make sure oats, almonds, and coconut are well coated with sugar, syrup, and oil.

Spread out on one large baking sheet (or two small sheets).

Bake 1 hour, stirring every 15 minutes for even browning.

Remove the sheet from the oven and let cool on wire racks. Scoop or pour granola into a large bowl, add raisins or cherries, and mix well.
