1 can (10 oz.) Ro*Tel Original Tomatoes & Green Chilies, drained
1 pkg Kraft Homestyle Macaroni and Cheese
1/2 cup milk
2 Tbsp butter
2 Tbsp olive oil
8 oz (1/2 of 16 oz. box) Velveeta Mexican Cheese, Small Cubed

Let's Make It
Preheat oven to 425°F. Place onion, green pepper, zucchini in a heated saute pan with olive oil. Cook until lightly browned and tender (8 minutes) over medium heat.
Add drained can of Ro*Tel tomatoes and chilies to vegetables, cook additional 2 minutes, and then keep warm.
While vegetables are being sauteed, prepare Homestyle macaroni and cheese per package directions. During step 3 on package directions, add cubed Velveeta to cheese sauce mixture until melted, continue with step 4 of package directions.
Layer 1/2 macaroni and cheese in bottom of 1 1/2 quart casserole dish, layer vegetables on top, then add remaining macaroni and cheese. Top with bread crumb packet.
Bake for 10 minutes. Let sit for 5 minutes before serving.
