Rice, Beans and Sausage

1 1/2 cups rice, uncooked
1 chopped onion
1 Tbsp olive oil
1 pkg (13 oz.) sausage
1 can (14 oz.) chicken broth
1 1/4 cups water
1 can (15 oz.) black beans
1 can (15 oz.) whole kernel corn

Combine rice, onion and oil in a 9x13 baking dish.

Cook sausage and crumble, add to rice mixture.

In separate saucepan, bring chicken broth and water to a boil and pour over rice and sausage mixture.

Bake at 375 degrees F for 30 min.

Stir in black beans, corn, and cilantro (if wanted). Bake 15 minutes more.
