Original recipe yields 1 serving
1/4 cup diced yellow bell pepper
1/4 cup diced red onion
1/2 can black beans
1/2 can corn
1 fresh diced tomato
4 boneless chicken breasts
2.5 Tbsp Mrs. Dash Southwest Chipotle seasoning, divided
1 cup finely shredded cheddar cheese, divided
2 cups Stove Top Stuffing
1 1/2 cups thick & chunky salsa, divided

Preheat oven to 400 degrees F. In a large skillet over medium heat add pepper, onions, black beans, corn, tomato and 1 Tbsp. of Mrs. Dash. Sautee for 5 min.

Butterfly chicken breast and pound each breast till about 1/4 inch thick. Put 1/4 of bean mixture inside each chicken breast and lightly sprinkle with cheese. Roll each breast into roll.

Take stuffing mix with 1/2 cup of salsa, 1/2 cup of warm water and 1/2 tsp. of seasoning mix and place on bottom of greased glass pan. Place chicken seam side down on top of stuffing mixture. Top each breast with remaining seasoning, salsa and cheese. Cover with foil.

Bake for 30-40 min or until done.
