Original recipe yields 1 serving
6 medium potatoes
5 slices bacon
3 Tbsp sugar
1/3 cup apple cider vinegar
1/2 tsp salt
1 Tbsp flour
1/2 cup cold water
1/2 cup chopped scallions
1/4 tsp celery salt

1. Bring large pot of water to a boil. Add potatoes unpeeled. Cook until tender but still firm, 15 min max. Drain and cool about 15 min and peel with a knife while still pretty warm. Set aside to cool completely and chop.

2. Fry bacon in a large skillet until crispy. Set bacon aside on a paper towel and leave grease in pan.

3. Add sugar, vinegar, and salt to bacon fat over medium heat. Mix flour and water together in a small bowl and slowly add to skillet. Heat until it thickens.

4. Add potatoes, bacon (broken up), scallions and celery salt to skillet and stir until coated and heat until warm. Serve warm from the skillet or bowl. Enjoy!
