1 cup butter
2 cups sugar
4 eggs
3 cups flour all purpose
2 tsp baking powder
1/2 tsp salt
1 tsp soda
3 cups mashed sweet potatoes
1-2 dollops Sugar Free Cool Whip

Cream butter thoroughly, Add sugar, beat well. Add eggs one at a time, beat after each addition. Combine dry ingredients and add to creamed mixture with sweet potatoes.

Line tube cake pan with wax paper. Grease and flour the pan; pour in batter.

Bake at 350 degrees F for 1 hour until done. Leave in pan 5 minutes and remove. Serve with Sugar Free Cool Whip.
