Original recipe yields 1 serving
3 cups all-purpose flour
3 Tbsp parmesan cheese
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
2 eggs
1 cup buttermilk
1/3 cup sugar
1/3 cup butter, melted
1 cup shredded peeled zucchini
1 Tbsp grated onion

In a bowl, combine the flour, parmesan cheese, salt, baking powder, and baking soda. In another bowl, beat the eggs, buttermilk, sugar and butter. Stir into dry ingredients just until moistened. Fold in zucchini and onion.

Pour into a greased and floured 9x5x3 inch loaf pan.

Bake at 350°F for 1 hour or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
