Original recipe yields 1 serving
3 chicken breasts (or any meat you want), diced
1 large onion, diced
Any other veggies you might want
1 can coconut milk
1 large can chopped tomatoes
1/2 jar red curry paste (or to taste)
1 Tbsp tamarind paste (to taste) (optional)

Let's Make It

Saute the chicken, onions and other veggies in a large wok over medium heat.

Once chicken is mostly cooked add coconut milk and canned tomatoes. Let simmer for 5 minutes.

Then add curry paste and tamarind paste to taste. Cook on low/medium heat for 25 minutes or until curry is thick (it's supposed to be on the watery side). Serve with white rice.
