Rub roast with salt & pepper. Place fat side down (if using a cut like that).
Cover and roast at 350°F until you smell it browning. Turn roast a few times. DO NOT ADD WATER yet!
When juices have browned to your liking, remove roast, cover and rest it. Add all but 1/2 cup water. Stir to get all the goodies off bottom.
Mix your gravy thickener with remaining cold water and add to broth you made from the goodies. Stir till thick.
