Scallop Chowder

Original recipe yields 1 serving
8 oz bacon, chopped
2 large leeks, sliced thin
3 garlic cloves, chopped
1 Tbsp fresh thyme, chopped
1.5 cups fresh or frozen corn
1.5 lb potatoes, peeled & cut into 1/2 inch dice
3 cups clam juice
1 cup heavy cream, scalded
1 lb bay scallops

Cook bacon in large pot over med-high until crisp. Add leeks, garlic, and thyme. Saute until leeks soften. Add corn & saute 2-3 min.

Add potatoes & clam juice (add water if needed to cover potatoes) & bring to boil. Reduce heat & simmer until potatoes are tender.

Mash a few potatoes to thicken broth. Add scallops & cream & simmer until scallops are opaque. Season to taste with salt & pepper.
