2 cups sugar
2 cups firmly packed brown sugar
2 cups golden raisins
2-1/2 cups cider vinegar
8 large sweet red peppers, seeded and finely chopped
8 cloves garlic, finely chopped
4 jalapeno peppers, seeded and finely chopped
12 oz jar crystallized ginger, finely chopped

Combine all ingredients in a large Dutch oven.

Bring to a boil. Reduce heat and simmer uncovered 1 hour stirring occasionally.

Pack in hot jars, leaving 1/2 in. headspace. Remove air bubbles, wipe jar rims. Cover at once with metal lids, and screw on bands. Process in a water bath of boiling water for 10 Min. Store in refrigerator after opening.
