Slice onion into rings and place rings around the bottom of a slow cooker. Place roast on top of onion rings and sprinkle with black pepper (and ground cayenne pepper, if you wish) to taste. Dice garlic and sprinkle around roast. Peel and wash carrots and potatoes and cut into large pieces. Place carrot and potato pieces around roast in slow cooker.
Mix together the two packs of instant brown gravy (make sure each pack makes 2 cups of gravy) with 4 cups of warm tap water. Whisk together and pour around roast.
Cook on low for 8 hours.
