Cut two slits through fat of pork chop edges. Mix dry ingredients and rub on pork chops. Coat with flour and pat off excess. Let stand 10 minutes.
Preheat bacon grease with vegetable oil on medium high.
Dip pork chops in flour again and fry for 3-4 minutes on each side or until cooked through.
