Mix Russian dressing and apricot preserves (however much preserves you want, the more you add the sweeter) I use just a bit more preserves than all the dressing. Stir well.
Salt and pepper the pork.
Put liquid mixture and pork in a frying pan and cook until thoroughly cooked through. I baste the pork every chance I get. Serve with mashed potatoes and a favorite veggie.
