Stir together sour cream, mayonnaise, and both mustards in a small bowl. Cover with plastic wrap and refrigerate until you are ready to serve - at least 2 hours.
Preheat oven 375°F. Line 2 rimmed cookie sheets with parchment paper. Set oven racks at centermost positions. Cut salami in very thin slices and lay in single rows on baking pan. Bake until they are evenly browned and rigid - 10-12 minutes. Transfer to paper towels to drain off excess fat. Cool and drain. The salami will crisp further as it cools.
Arrange salami chips in a bowl or on a plate with the dip alongside.
