Preheat oven to 350 degrees F. Arrange the bread on baking sheet and drizzle with 1 Tbsp. olive oil. Bake for 5 minutes on each side, until golden and crisp. Arrange the toasts on serving platter.
Process the sun-dried tomatoes, olive oil, capers, garlic, lemon zest, lemon juice, and thyme in a food processor until well blended.
Arrange the arugula lease and sun-dried tomato pesto on top of the toasts. Top with sliced mozzarella and serve.
