In mixing bowl combine 2 cups of the flour and the yeast. In small bowl combine potato, oil, sugar, salt and 1 1/2 cups warm water (110 degrees F). Add to dry ingredients.
Beat at low speed with electric mixer for 1/2 minute scraping sides of bowl constantly. Beat 3 minutes on high. By hand stir in remaining flour. Cover, refrigerate for at least 2 hrs. or up to 3 days. Punch down, turn out on lightly floured surface. Cover with clean dish towel. Let rest 10 minutes: with lightly floured hands shape into 24 buns.
Place in greased 13x9x2 baking pan. Cover let rise till almost double (40 minutes). Bake at 400 degrees F till done 16-20 minutes.
