Brown hamburger meat in a large skillet with diced jalapeños. Once meat is nearly browned, drain excess grease. Add spaghetti sauce and simmer 5 minutes.
Simultaneously heat olive oil in another large skillet over medium heat. Add chopped eggplant and cover, stirring frequently and adding olive oil or water as needed for moisture. Salt and pepper to taste; sauté until tender.
In a large bowl, combine cooked rice, hamburger/sauce, cooked eggplant and cheese. Stir until well-mixed.
Preheat oven to 325 degrees Fahrenheit. Arrange bell peppers in 9x13 or similar baking pan. Fill peppers with rice mixture and replace tops on peppers. Any extra filling can be placed in the bottom of the pan or eaten as is. Cover pan with aluminum foil and bake for approximately 20 minutes or until green peppers soften.
