1 can (20 oz.) crushed pineapple in juice, undrained
cold water
1-1/2 cups boiling water
1 pkg. (8-serving size) JELL-O Orange Flavor Sugar Free Gelatin
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened

Drain pineapple, reserving juice. Add enough cold water to reserved juice to measure 1-1/2 cups. Stir boiling water into dry gelatin in large bowl at least 2 min. until completely dissolved. Stir in measured pineapple juice and water. Remove 1 cup of the gelatin; let stand at room temperature.

Stir 1/2 of the crushed pineapple into remaining gelatin. Pour into 6-cup mold sprayed with cooking spray. Refrigerate 2 hours or until set but not firm (gelatin should stick to finger when touched and should mound). Gradually add reserved 1 cup gelatin to Neufchatel in medium bowl, stirring with wire whisk until well blended. Stir in remaining crushed pineapple. Pour over gelatin layer in mold.

Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin mold in refrigerator.

How to Unmold Gelatin
Lightly spray the mold with cooking spray or lightly brush with oil before filling. Allow gelatin to set until completely firm, several hours or overnight. There are several easy ways to unmold the gelatin. Dip knife in warm water and run knife around edge of gelatin to loosen the edges. Dip mold in warm water, just to rim, for 15 sec. Lift from water and gently pull gelatin from edge of mold with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate and shake to loosen gelatin. Gently remove mold. If mold is still not ready, place in warm water for another 5 sec.
Food Fact
Do not use fresh or frozen pineapple, kiwi, gingerroot, papaya, figs or guava. Gelatin will not set.
How to Soften Neufchatel Cheese
Place completely unwrapped package of Neufchatel on microwaveable plate. Microwave on HIGH 10 to 15 sec. or until slightly softened.
Substitute
Substitute 2 pkg. (4-serving size each) JELL-O Orange Flavor Sugar Free Gelatin for the 1 pkg. (8-serving size) gelatin.
