What You Need
Original recipe yields 10 servings
1 cup bulgur, uncooked
1-1/2 cups boiling water
1/4 cup olive oil
2 to 3 Tbsp. fresh lemon juice
1 clove garlic, minced
1/2 tsp. salt
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
1 cup chopped fresh parsley
1 medium tomato, chopped
1/2 cup green onion slices

Mix bulgur and boiling water in large bowl; cover. Let stand 20 min. or until bulgur is softened.
Stir in oil, juice, garlic and salt until well blended.
Add remaining ingredients; mix lightly.

Salad can be prepared in advance. Store in tightly covered container in refrigerator.
