What You Need
Original recipe yields 21 servings
5-1/3 cups flaked coconut
2/3 cup sugar
6 Tbsp. matzo meal
1/4 tsp. salt
4 egg white s
2 tsp. grated lemon zest
1 tsp. almond extract

Let's Make It
Preheat oven to 325°F. Mix coconut, sugar, matzo meal and salt in large bowl. Stir in remaining ingredients until well blended.
Drop tablespoonfuls of dough, 2 inches apart, onto lightly greased baking sheets dusted with additional matzo meal.
Bake 20 min. or until edges of cookies are golden brown. Immediately remove from baking sheets. Cool on wire racks.
