Mix 1/2 cup of the flour and salt in medium bowl. Add 1/2 cup of the milk, eggs and 1 tablespoon butter, melted; beat with wire whisk until smooth. Let stand 30 minutes. Heat lightly greased 8-inch skillet on medium heat until hot. For each crepe, pour 1/4 cup batter into skillet. Cook until lightly browned on both sides.
Melt 1/4 cup butter in saucepan on low heat. Stir in remaining 1/4 cup flour. Cook 2 minutes or until bubbly. Gradually stir in remaining 1-1/2 cups milk until smooth. Stirring constantly, cook on medium heat until mixture boils and thickens. Add Swiss cheese and process American cheese; stir until melted. Combine 1 cup of the sauce, spinach and mushrooms. Fill each crepe with 1/3 cup spinach mixture; roll up. Place, seam-side down, in 12x8-inch baking dish. Top with remaining sauce.
Bake at 350°F for 20 to 25 minutes or until thoroughly heated.
