1 Tbsp. vegetable oil
4 boneless skinless chicken breast halves
1/2 cup water
2 cups fresh or frozen broccoli florets
2 cups MINUTE White Rice, uncooked
3/4 lb. (12 oz.) VELVEETA®, cut up

HEAT oil in skillet. Add chicken; cook until browned. Remove chicken.

ADD broth, water and broccoli; stir. Heat to a boil.

STIR in rice and VELVEETA. Top with chicken; cover. Cook on low heat 5 minutes or until cooked through. Gently stir until VELVEETA is melted.

Variation: 15 Minute Mexican Cheesy Chicken & Rice: Substitute 1 jar (16 oz.) TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa for the chicken broth and frozen corn for the broccoli flowerets. Increase water to 1 cup. Garnish with green onion slices, if desired.
