With a cakelike layer on top of a custard layer, this warm baked pudding is a comfort food treat. Serve it topped with fat-free whipped topping.

Original recipe yields 6 servings
2 Tbsp. margarine
1/2 cup sugar
1 tsp. grated lemon zest
1 egg yolk
2 Tbsp. lemon juice
3 Tbsp. flour
1/4 cup wheat and barley cereal nuggets
1 cup fat-free milk
2 egg white s, stiffly beaten

Beat margarine, sugar and lemon peel until light and fluffy. Blend in egg yolk. Stir in lemon juice, flour, cereal and milk. (Mixture will look curdled, but this will not affect finished product.) Gently stir in beaten egg whites. Pour into 1-quart baking dish sprayed with cooking spray. Place dish in pan of hot water.

Bake at 325°F for 1 hour or until top is golden brown and pudding begins to pull away from side of dish. (Pudding will have cake-like layer on top with custard below.) Serve warm.
