Heat 2 tablespoons of the oil in medium skillet. Add onion; cook and stir until tender. Set aside.
Place 1/3 of potatoes in food processor container; cover. Pulse to finely chop. Add 1 egg; process just until blended. Place in colander. Sprinkle with 1/4 cup matzo meal; drain. Repeat with remaining potatoes, eggs and matzo meal.
Mix potato mixture, onions, salt and pepper in large bowl. Spoon into greased 13x9-inch baking dish. Brush top with remaining 2 tablespoons oil.
Bake at 350°F for 1 hour or until top is browned and edges are crisp. Cool 10 minutes before cutting into squares.
