1/2 tsp. onion powder
1/2 tsp. salt
1/4 tsp. pepper
3 sheets matzo, broken into large pieces

Mix eggs, onion powder, salt and pepper.

Place matzo in shallow baking dish. Pour egg mixture over matzo; let stand until egg mixture is evenly soaked into matzo.

Heat 1/2 inch of oil in large skillet on medium heat. Add single layer of matzo; cook 5 minutes or until golden brown, carefully turning once. Repeat with remaining matzo.
