Coat eggplant slices with dressing. Arrange eggplant slices in single layer on cookie sheet. Broil 5 to 7 inches from heat for 8 minutes on each side or until lightly browned.
Place eggplant slices in single layer in 10x6-inch baking dish. Top with tomato slices. Top evenly with cheese and sauce.
Bake at 350°F for 30 minutes until thoroughly heated.
Variations: Prepare as directed, adding 2 cups cooked sliced mushrooms to eggplant.
For a noodle lasagna, prepare as directed, alternating layers of eggplant and cheese with cooked lasagna noodles.
Garnish with fresh basil leaves or parsley sprigs.
