Mix juice, oil, rum, salad dressing mix and ginger in cruet or small bowl until well blended. Pour over remaining ingredients; cover. Refrigerate 30 minutes to 1 hour to marinate. Drain; discard dressing.
Arrange fish and vegetables on skewers.
Place kabobs on greased grill over medium-hot coals. Grill 4 to 6 minutes on each side or until fish flakes easily with fork.
Variation: Prepare kabobs as directed. Place kabobs on rack of broiler pan. Broil 3 to 5 inches from heat, 4 to 6 minutes on each side or until fish flakes easily with fork.
