Onion, parsley, mint, peanut oil and lemon juice add color and refreshing flavor to this chilled bulgur salad.

Original recipe yields 4 servings
1/2 cup fine bulgur wheat
1-1/2 cups chicken broth, heated to boil
1 small onion, finely chopped
1 bunch fresh parsley, finely chopped (about 3/4 cup)
1/4 cup fresh mint, finely chopped
3 Tbsp. PLANTERS Peanut Oil
3 Tbsp. lemon juice
1/8 tsp. ground black pepper
4 lettuce leaves

Mix bulgur and broth in medium bowl. Let stand 30 min.; drain well.

Add onions, parsley and mint; mix well. Stir in oil, lemon juice and pepper. Cover.

Refrigerate 2 hours or until ready to serve. Serve on lettuce-covered plates.
