String cheese into thin strips. Unroll pizza crust on lightly greased cookie sheet. Cut into 4 equal squares. Spoon 2 teaspoons of ricotta and pizza sauce onto each square. Sprinkle with string cheese. Fold crusts over; pinch all edges to seal.
Bake at 425°F for 10 to 12 minutes or until browned. Let cool slightly.
