Arrange 24 crackers on bottom of 13x9-inch baking dish sprayed with cooking spray. Cover with layers of turkey, broccoli, mushrooms, pimientos and cheese; top with remaining crackers.
Whisk eggs and milk until blended; pour over crackers. Cover with foil; refrigerate 6 hours.
Heat oven to 350°F. Bake casserole, covered, 1 hour 10 min. or until knife inserted in center comes out clean. Let stand 10 min. before cutting to serve.
