Original recipe yields 4 servings
2 cups instant brown rice, uncooked
1 pkg. (6 oz.) baby spinach leaves
1 large orange, peeled, sectioned
1/4 cup red onion slices
1/2 cup KRAFT Lite CATALINA Dressing

Prepare rice as directed on pkg.; cool.
Place rice in large bowl. Add spinach, oranges and onion; mix lightly.
Add dressing just before serving; toss to coat.
Substitute 1 can (11 oz.) mandarin orange segments, drained, for fresh orange sections.
