2 cups water
1 env. GOOD SEASONS Italian Dressing Mix
2 cups instant white rice, uncooked
1-1/2 cups chopped cooked fresh beets
1/2 cup POLLY-O Shredded Parmesan Cheese

Let's Make It
Mix water and dressing mix in medium saucepan. Bring to boil on medium-high heat, stirring occasionally.
Add rice and beets; mix lightly. Remove from heat; cover. Let stand 5 min. or until liquid is absorbed.
Stir in cheese.
Substitute 1 jar (15 oz.) whole beets, drained and chopped, for the chopped cooked fresh beets.
