Applesauce replaces most of the fat in these moist muffins made with bran cereal and a touch of cinnamon. Serve them for breakfast or a snack.
What You Need
Original recipe yields 12 servings
1 cup flour
1-1/2 tsp. CALUMET Baking Powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
2 cups wheat bran high-fiber cereal
1-1/4 cups 2% milk
1/3 cup firmly packed brown sugar
1 egg, slightly beaten
1/2 cup applesauce

Mix flour, baking powder, baking soda and cinnamon in large bowl. Mix cereal, milk and sugar in medium bowl; let stand 5 minutes. Stir in egg and applesauce. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)
Spoon batter into muffin pan sprayed with cooking spray, filling each cup 2/3 full.
Bake at 400°F for 18 to 20 minutes or until golden brown. Serve warm.
Substitute buttermilk for 2% milk.
