Classic lemon bar cookies get a flavor twist when the lemon filling is baked over a delectable crust made with chocolate wafer cookie crumbs.
What You Need

Original recipe yields 16 servings
20 chocolate wafer cookies, finely crushed (about 1 cup crumbs)
2 Tbsp. margarine or butter, melted
2 egg s
1 Tbsp. grated lemon zest
2 Tbsp. lemon juice
1 cup granulated sugar
2 Tbsp. flour
1/4 tsp. CALUMET Baking Powder
2 Tbsp. powdered sugar

Preheat oven to 350°F. Mix wafer crumbs and margarine; press firmly onto bottom of 8-inch square baking pan. Bake 5 min.

Meanwhile, beat eggs, lemon zest and lemon juice with wire whisk until well blended. Add sugar, flour and baking powder; mix well. Pour over crust.

Bake 25 min. Cool on wire rack 10 min.; sprinkle with powdered sugar. Cut into 16 squares. Serve warm. Store leftover bars in tightly covered container at room temperature.

Tip 1
How to Grate Citrus Peel
Always wash and dry citrus fruit before grating. Move the whole fruit up and down on the side of the grater with the smallest holes to remove ONLY the surface of the fruit peel. (The inner white part is bitter.) Continue to grate the fruit until you have the desired amount of grated peel, rotating the fruit on the grater as necessary. Use a pastry brush or old clean toothbrush to aid in cleaning grater.

Special Extra
For easy cleanup, line baking pan with foil using this easy method.  Turn pan upside down and fit a piece of foil over top of pan, smoothing corners as needed.  Remove foil.  When you turn the pan over, the foil fits perfectly inside the pan.
