1-1/2 cups flour, divided
1-1/4 cups sugar, divided
1/3 cup margarine or butter, softened
1 cup cholesterol-free egg product
1/2 cup lemon juice
1 Tbsp. grated lemon zest

Blend 1 cup flour and 1/4 cup sugar; cut in margarine or butter until mixture resembles coarse crumbs. Press mixture on bottom of 9x9x2-inch baking pan. Bake at 350°F for 15 minutes or until lightly browned.

Blend egg substitute, lemon juice, lemon peel and remaining flour and sugar; pour over pastry crust. Bake 15 to 18 minutes more or until set. Cool slightly; sprinkle with powdered sugar if desired. Cool completely; cut into 2x1-inch bars.
