Original recipe yields 12 servings
1 cup yellow cornmeal
1 cup flour
1/4 cup sugar
1 Tbsp. baking powder
1/4 tsp. ground red pepper, optional
1 cup milk
1 egg, beaten
1/4 cup 53% vegetable oil spread, melted
1 cup canned or frozen corn
1/4 cup chopped red bell pepper
1/4 cup chopped green onion

Combine cornmeal, flour, sugar, baking powder and red pepper in medium bowl. Stir in milk, egg and spread just until blended. (Batter will be slightly lumpy).

Stir in corn, chopped red pepper and green onions just until mixed. Spoon mixture into 12 lightly greased 2 1/2-inch muffin-pan cups.

Bake at 400°F for 20 to 25 minutes or until done. Remove from pan. Cool slightly on wire rack. Serve warm or at room temperature.
