1/2 cup celery slices
1/3 cup chopped onion
1/2 cup (1 stick) butter or margarine, divided
2 cups cooked MINUTE White Rice
1/2 tsp. poultry seasoning
1 capon (6 to 7 lb.)

Cook and stir celery and onions in 3 tablespoons butter. Add rice and seasoning; mix lightly.

Stuff capon with rice mixture; close openings with skewers and string. Place, breast side up, on rack in baking pan. Melt remaining butter; brush on capon.

Bake at 325°F for 2 hours and 30 minutes or until tender, brushing occasionally with butter.
