1 cup broccoli florets
1/2 cup sliced mushrooms
1/2 small red bell pepper, diced
2 green onion s, cut into 1/2-inch pieces
2 tsp. margarine or butter
2 cups cholesterol-free egg product
2 Tbsp. GREY POUPON Dijon Mustard
1/2 tsp. dried Italian seasoning

Cook broccoli, mushrooms, red pepper and green onions in margarine or butter in 10-inch nonstick ovenproof skillet over medium-high heat until tender-crisp, about 3 minutes. Remove from heat.

Mix egg substitute, mustard and Italian seasoning in bowl. Pour into skillet over vegetables.

Bake at 375°F for 20 to 25 minutes or until set. Serve immediately.
