1-1/2 cups flour
1/2 cup packed brown sugar
1-1/2 tsp. CALUMET Baking Powder
1/2 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. baking soda
1 egg
1/4 cup oil
1 tsp. vanilla
1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 Granny Smith apple, finely chopped

Heat oven to 400ºF.

Combine first 6 ingredients.

Whisk egg, oil and vanilla in large bowl until blended. Stir in cottage cheese and apples. Add flour mixture; stir just until moistened.

Spoon into 12 paper-lined muffin cups.

Bake 25 min. or until golden brown.

Make Ahead
These moist muffins can be baked ahead of time. Cool completely. Place in freezer-weight resealable plastic bags; seal bags. Freeze up to 2 weeks.

Apple-Cinnamon Scones
Prepare batter as directed. Drop into 10 mounds, 2 inches apart, on baking sheet sprayed with cooking spray, using about 1/4 cup batter for each mound. Bake in 400ºF oven 25 min. or until golden brown. Makes 10 servings.
