1 loaf Italian or French bread, split lengthwise
6 cups assorted sliced mushrooms, such as portabello, crimini and button
1 cup sliced green onion s
2 cloves garlic, minced
1 Tbsp. olive oil
1 cup ATHENOS Crumbled Gorgonzola Cheese

Scoop out center of bread loaf, leaving 1-inch thick shell.

Cook and stir mushrooms, onions and garlic in olive oil until tender. Fill bread shell with mushroom mixture. Top with cheese. Wrap in foil.

Bake at 400°F for 15 to 20 minutes or until cheese is melted. Slice before serving.
