What You Need
Original recipe yields 6 servings
1/4 cup bacon drippings or rendered bacon fat
1 medium onion, finely chopped
3 cloves garlic, finely chopped
1 lb. kale, washed, cut into 1/4-inch-wide strips

Let's Make It
Heat bacon fat in large skillet on medium-high heat.
Add onions and garlic; cook 3 min., stirring frequently. Reduce heat to medium.
Add kale, a handful at a time. Cook and stir 5 min. or until leaves just begin to wilt. (Kale will be just tender.)
How to Cut the Kale
Fold kale leaves in half lengthwise. Cut away stems and inner ribs; discard. Stack flattened leaves; roll up tightly. Cut into strips as directed.
Crumble the cooked bacon used for getting the bacon fat. Sprinkle over the cooked kale just before serving.
