Cook and stir onions, zucchini and red or green pepper in margarine or butter in skillet over medium-high heat for 4 to 6 minutes or until tender. Set aside.
Mix bread cubes and cooked vegetables in greased 8 x 8 x 2-inch baking dish. Top with cheese.
Mix egg substitute and milk in small bowl; pour over bread mixture.
Bake at 375°F for 45 to 50 minutes or until browned and knife inserted in the center comes out clean. Garnish as desired.
