Make Castle Frame: Rinse cartons. Using razor blade or mat knife, cut off top of cartons 5 1/4 inches from the bottom; discard tops. Turn cartons upside down and tape together to form square. Using frosting, attach 3 whole grahams to each of 3 sid es of frame (corners of frame will show). Cut 1 whole graham in half to make 2 squares. On remaining side of frame, attach halved graham on right top (this will be over drawbridge door); place remaining whole grahams to left of halved graham. Cut out uncovered cardboard square to make drawbridge door opening.
Make Castle Columns: Stack 10 chocolate sandwich cookies, securing with 1 teaspoon frosting between cookies; repeat to make a second stack. Attach each column to right and left front corners of castle with frosting.
Make roof and floor: Spread frosting on castle roof; press 9 chocolate chip cookies into frosting. Spread frosting inside castle drawbridge door; press 3 cookies into frosting, cutting to fit. Halve 9 pieces of bubble gum; alternately attach whole and halved pieces of bubble gum along top edge of each side. Stand ice cream cones, top-side down, on each column.
Make windows: Brush peppermint gum sticks with yellow food coloring, using damp paper towel to even the color. Cut each stick in half to form 18 pieces. For 3 front top windows, place 2 gum pieces side by side for each window; round the top corners
