Rice pudding is one of our favorite comfort foods! And this one, made with cinnamon, brown sugar and raisins, is one of our favorite favorites.
What You Need
Original recipe yields 4 servings
1-2/3 cups water
1-1/3 cups instant brown rice, uncooked
1/2 cup raisins
1/2 cup BREAKSTONE'S FREE or KNUDSEN Fat Free Sour Cream
1 Tbsp. brown sugar
1/2 tsp. ground cinnamon
1/2 cup PLANTERS Sliced Almonds

Let's Make It
Bring water to boil in medium saucepan on medium-high heat. Add rice and raisins; stir. Cover; simmer on medium-low heat 5 min. Remove from heat; let stand, covered, 5 min.
Mix sour cream, sugar and cinnamon until blended. Add to rice mixture; mix well.
Serve topped with nuts.
How to Prepare with Leftover Cooked Rice
Cook 2 cups leftover cooked rice with 2 Tbsp. milk in saucepan until heated through, stirring frequently. Remove from heat. Add sour cream mixture; mix well. Serve topped with nuts.
