Let's Make It
Puree beans in food processor until smooth. Add rum, sugar, tomato juice, and 3 tablespoons of the cilantro. Blend until smooth. Season with salt and pepper. Refrigerate until needed or heat and hold warm for service.
Cut a small slit in center of each tuna fillet to form a pocket. Refrigerate until needed.
Combine mozzarella and pineapple, refrigerate until needed.
Stuff 3 oz. of filling into tuna pocket and season with salt and pepper. Heat oil in saute pan and sear tuna on both sides until golden brown. Place in oven until cheese begins to melt. Spoon 3 oz. of warm sauce on each plate and top with tuna. Sprinkle with 1 teaspoon remaining cilantro and serve.
